Little people seem to love pasta with tomato sauce, sometimes it’s hard to get them to eat anything else!! Why not try adding soft cooked red lentils and some double cream to make it a more nutritious.
I’m lazy so often go for an easy homemade tomato sauce option – roast a chopped onion, diced garlic clove, and a punnet of halved cherry tomatoes with a generous splash of olive oil, a pinch of herbs and a splash of balsamic vinegar. It takes about 40 minutes but you can just leave it to do it’s thing. Then simple eat as it is, or blend for a smooth sauce.
For the creamy lentil tomato sauce just add a spoonful or cooked red lentils and a dash of cream to the roasted tomatoes and blitz until it is smooth. It’s a good idea to have some ice-cubes of frozen cooked red lentils, but they only take about 10 minutes to boil to soft.
